Meet the Chef

I have loved to cook as long as I can remember! As a child in France, I watched my mother produce wholesome, simple fare. I learned from my native country that food is a pleasure, that cooking is an art and that moderation and variety are the keywords to staying fit and healthy. Although my past formal training has been in journalism and foreign languages, I have always had a passion for food. Now, after being in the publishing field for more than 20 years, I decided to follow my true love, cooking for others, and started Thyme And Again. |
For many years I have been the extended family chef; entertaining family members and friends. In the last few years, I have further honed my skills through self-instruction—extensive study of cookbooks in three languages—as well as attending formal cooking classes. I get my inspiration from my childhood and years of travel throughout Europe and the Middle East.
I believe that ingredients are best enjoyed when the least has been done to them. I never buy groceries with additives or food coloring because these can only reduce the wholesome value of food. I love the Mediterranean diet because it promotes good health and is not a cuisine of deprivation. You don’t have to sacrifice flavor and pleasure to be fit and healthy. Enjoy your meals; choose what you will have on your plate, delicious and salubrious ingredients! Let me pamper you and take the stress from preparing, day by day, fresh, healthful food. The balance of the main courses will allow you the indulgence of choosing from among one of the many mouthwatering desserts on the menu.

I hate cooking. I hate cleaning the mess around. However, since we are French, we enjoy eating good meals. So we are very happy we met Danielle. She brings the French and Mediterranean cuisine in your plate with authenticity and high quality.
The pâtés Danielle creates, personalized with her own touch, are fantastic. I highly recommended them. Her quiches are great and so are the different dishes she prepared for us. Also, unlike others, she can bake the “real” éclairs aux chocolats (the same we used to have in the pâtisseries in France). It is amazing. They are delicious. A real treat.
Finally, when you meet Danielle, you will appreciate her kindness, her joy and passion in every dish she prepares for you. Thank you so much Danielle, for bringing this wonderful cooking to our home.

For many years I have been privileged to dine at Danielle’s Table! I am always amazed at the diversity of her menus and her skill at preparing what seems to me would require a team… but with flair and efficiency out comes a complex and delicious meal. She has high standards about the purity of ingredients. Of course she can do totally appetizing basic cuisine too. I often have parties with 30 or more people and they always rave about the main dishes and scrumptious desserts she brings.

Danielle is a chef to be treasured; we have reveled in her cool, luscious summer soups, her savory stuffed tomatoes and peppers, and her world class pâtés―silky and sumptuous. Then there are her mouth-watering puff pastry hors d’œuvres, hot from the oven, and tangy lemon cake with a velvety yet light texture. Her dishes always achieve a masterful balance of pure, fresh flavors combined with wonderful dashes of herbs and spices. Quite simply, her food will make you happy!
